Observation:
The bread proofer (retard dough), in the walk-in-cooler, has food debris stuck on the exterior and top surfaces of the equipment. Accumulated food will attract pests.
Corrective Action(s):
Scrape and scrub the food debris off the bread proofer surfaces, and sanitize. Increase the frequency at which this piece of equipment is cleaned.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers and walk-in-cooler were below 4C; walk-in-freezer was -18C; hot holding units were 60C or hotter; thermometers present; and temp. logs recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer is spray bottle was 200ppm.
- Food storage practices done properly. Foods stored in food grade containers; covered; labeled; date coded; in groups w/ proteins on lowest/separate shelves and RTEs on top shelves; and 6" off the floor on shelves.
- Food handling practices done correctly. Staff washed hands frequently and at the appropriate times, and correctly. Disposable gloves discarded after completion of a task and a new pair used. Hands washed prior to placing gloves on.
- FoodSafe certified staff present.
- Sanitation level is good. No signs of pests.
- Premises is clean and organized.
