Comments

Spanikopita was stored in hot holding unit with out extra metal pan and kept at 63C.
Handsink in the back was accessible and has paper towel.
Bleach sanitizer measured at 100ppm in the third sink but 10ppm in the bucket.
*Please change the bleach sanitizer solution more frequently.
Mice droppings behind chest freezer has been removed but a few more noted.
*Please clean this area more frequently to monitor for mice activity.
More cleaning required under hot holding unit grill as indicated to operator.
Thermometer found but battery needs to be changed. Remember to sanitize the thermometer between uses..
