Observation (CORRECTED DURING INSPECTION): Several savory potentially hazardous food were still being displayed for sale although it had passed time stamp of 6 hours (time out indicates buns were taken out from oven at 6am and 6:45am this morning; time of inspection was about 3:15pm, buns should have been discarded at 12pm and 12:45pm).
Corrective Action(s): Food discarded: 6 mushroom buns, 3 ham croissants, 5 spinach and feta and 2 cheese buns. Discussed repeated issue with onsite staff in charge to possibly change stamp cards to discard time rather than time when food was removed from oven. Actively use time card as this is the only measure to ensure food safety since the perishable food were stored between 4 and 60C. Decide on an action plan and advise by follow up inspection.

Observation: Mould growth noted on caulking of kitchen handwash station and heavy mould noted on backsplash/wall of ware washing sink. Some cranberries spilled on shelf of walk-in freezer.
Corrective Action(s): Please remove mould and sanitize the surface. Recommend stripping out caulking material and recaulk. Complete by follow up inspection. Clean up the cranberries in walk-in freezer.
