Observation (CORRECTED DURING INSPECTION): Cooked meat observed to be in tubs at temperatures of greater than 4 degrees Celsius in cooler unit. Temperatures of 11 degrees Celsius observed - CORRECTED DURING INSPECTION. Lids opened to allow for air flow.
NOTE: Food was cooked in morning less than 6 hours prior to inspection

Corrective Action(s): Ensure lids are left slightly open in cooler unit when cooling cooked food items. This allows for steam and hot air to escape and cold air to penetrate food items to cool items quickly.
