Observation (CORRECTED DURING INSPECTION): Ice machine requires cleaning and sanitizing - biofilm/mould accumulation present
Corrective Action(s): Empty ice bin. Scrub clean and sanitize with 200 ppm quats sanitizer or 200 ppm bleach solution, and do so on a regular basis. Operator began cleaning at time of inspection.

Observation: - Cleaning of floors in back area by dishwasher, mop sink, and pop syrup boxes required.

Observation (CORRECTED DURING INSPECTION): Single-use cup was being used as a scoop for dry ingredients and left in dry ingredient bin.
Corrective Action(s): As discussed previously, do not use single-use/disposable items as scoops as they cannot be properly cleaned and sanitized. Discarded at time of inspection.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels and were easily accessible
- Quat sanitizer solution available at 200 ppm
- Food storage practices good - all food stored off the floor, organized and covered
- Walk-in cooler, drawer coolers, prep coolers were measured to be at or below 4C
- Freezer temperatures satisfactory
- All hot held items were measured to be above 60C
- Dipper well in use - good
- High-temperature dishwasher reached 72.5C at dish surface during rinse cycle - good
- Ventilation canopy maintained in sanitary condition
- No signs of pest activity noted at time of inspection. Reminder that back door must stay closed.
