Observation (CORRECTED DURING INSPECTION): Wiping cloths observed to be stored on the table at the cook line and being used to wipe cutting boards, knives, tables of food debris.
Corrective Action(s): Store wiping cloths in appropriate sanitizer bucket. Wiping cloths used soiled with food debris will grow and spread bacteria to other surfaces on contact and the hands of food handlers.

- General sanitation satisfactory.
- All handwashing stations (front/back) supplied with hot/cold running water, soap, and paper towels.
- Surface sanitizer available in designated spray bottles at 200ppm QUAT concentration.
- Three compartment sink available for manual dishwashing. Sanitizer available at 200ppm QUAT concentration.
- Bleach sanitizer 100ppm
- High temperature dishwasher achieved 73C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. Most food items are stored at min 15cm off the floor on shelving units.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
- Ice machine in clean condition.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding: > 60C
- Thermometers available in all coolers and freezers.
- Daily temperature logs kept up to date. Verified at the time of the inspection.
