209 - Food not protected from contamination [s. 12(a)]
Observation: The icing station is beside a pipe wrapped in insulation. The insulation is ripped exposing fine wire mesh and bits of fluffy insulation. The wire mesh and insulation could fall into the icing and customers could become ill or hurt when consumed.
Corrective Action(s): Install a barrier between the insulated pipe and the icing station to prevent insulation and wire mesh falling into the icing.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The automatic cream dispenser and the sandwich assembly cooler, in the front service area, were 10C. Bacteria can multiply at this warm temperature and perishable items will rot faster. Customers consuming the food will become ill. During the inspection, a maintenance company came to fix the coolers.

2) The insulated pipe, beside the stacked ovens, has broken insulation which is exposing wire mesh. The insulation is no longer durable, smooth, sealed and cleanable. In fact, there is a large accumulation of icing on the insulated pipe.
Corrective Action(s):
1) Immediately contact a company to repair the coolers so they are able to keep food below 4C at all times. Only place enough perishable foods in the coolers, which can be used up within 2 hours. At time of inspection, a maintenance company arrived and was fixing the cooler.

2) Remove and replace the insulation around the pipe so it is durable, smooth, intact, sealed and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Walk-in-cooler 0C; bottled drink cooler was 4C; freezer -21C; hot holding units above 60C; thermometers present; and temperatures recorded 4x a day.
- High temperature dishwasher had a rinse cycle temperature of 78.9C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in cloth buckets and 3-comp sink had strength of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins below or separate fro RTE foods; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired food in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- Exhaust hoods were professionally cleaned this month. Next service due in May 2024, as per service sticker.
- No signs of pests. Professional pest control company contracted to monitor for pests.
- Valid, FoodSafe certified staff present (or equivalent course).

**A follow-up inspection will occur on May 29/23 to ensure the temperatures of the coolers are 4C or colder.**
