Observation:
The following equipment are maintained in an unsanitary condition:
1. Inside of ice machine has mould growth on side walls.
2. Handles, faucet and basin of hand sink in kitchen.
3. Inside walls and propellers of dishwasher has grime and mildew accumulation.
Corrective Action(s):
1. Clean and sanitize inside of ice machine by following the manufacturer's instructions. Do not use ice machine until you receive written approval from health inspector. To be corrected by July 24, 2017.
2. Clean and sanitize hand sink handles, faucet and basin in kitchen. To be corrected today.
3. Clean and sanitize inside walls and propellers of dishwasher. To be corrected today.

Observation:
Several containers of cut vegetables found uncovered in prep cooler.
Corrective Action(s):
Cover vegetables with a food-grade cover. Ensure all food items are covered and protected from contamination. To be corrected immediately.

Observation:
General sanitation of premises requires improving, especially in the following areas:
- Behind chest freezer (near server station)
- Fan covers in walk-in cooler
- Doors and handles of equipment
- Floor in server station area

Clean and sanitize all the areas listed above. To be corrected by July 24, 2017.

Caulking for hand sink in employee washroom has deteriorated. In addition, the sink is coming off the wall.

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Low temperature dishwasher sanitizing with 50 ppm chlorine.
- Chlorine (bleach) sanitizer in kitchen (in bucket and spray bottle) = 100 ppm.
***ENSURE WIPING CLOTH IS STORED IN SANITIZER SOLUTION***
- Chlorine (bleach) sanitizer at server station = 200 ppm.
- Pest control in place.
