Observation (CORRECTED DURING INSPECTION): A number of sanitizer rag buckets were found with significantly less than 200ppm quat sanitizer
Corrective Action(s): Refreshed at time of inspection. Refresh these buckets frequently when in high use to keep sanitizer levels at functional concentrations.

Cream cheese/ sandwich prep cooler 6C (open and in use at time of measurement)
Hot holding well above 60C
Temperature monitoring well maintained.
Other than above noted, sanitizer containers found with 200ppm. Dispenser unit at 3 compartment sink also tested at 200ppm quat sanitizer.
General sanitation good
No evidence of pests. Note: open space at mop sink has been fitted with a panel. Excellent
