Observation (CORRECTED DURING INSPECTION): Chicken soup internal food product temperature 50 degrees C observed stored on lower shelf of preparation table. Operator stated it is extra that will be reheated prior to transfering into hot holding unit.
Corrective Action(s): Ensure soup is hot held at or above 60 degrees C after cooking/reheating. Do not store extra soup at room temperature. For cooling divide into smaller portions/use ice baths and cool from 60 to 20 degrees C in 2 hours then from 20 to 4 degree C in 4 hours. Operator has reheated the soup to over 74 degrees C.

Observation (CORRECTED DURING INSPECTION): At the time of inspection no bleach sanitizer solution for front food preparation area.
Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is available for use in front area.

Observation (CORRECTED DURING INSPECTION): Operator observed relocating turkey cooking in slow cooker in hot water tank/mop sink room. This room leads to the staff washroom. Ceiling tiles above appear to be absorbing moisture from cooking process and appears to have mould. Operator states the damage to the ceiling tiles is from a leak.
Corrective Action(s): As discussed in the previous inspection do not cook turkey in the slow cooker the hot water tank/mop sink room. This is an unsanitary practice. Future non compliance may result in the issuance of a violation ticket.

Observation: Sliding glass door cooler and front preparation cooler cooler missing accurate indicating thermometer
Corrective Action(s): Obtain accurate indicating thermometers for both coolers. Monitor and record temperatures of both and have recors available for review at all times. Correct by September 6, 2017.
