Observation: 1) The floor and areas behind equipment and shelves had visible build up of food debris.
2) Cooler handles and seals had build up of food debris.
Corrective Action(s): 1) The floor and hard to reach areas must be cleaned thoroughly. Build up of food debris in hard to reach areas can attract pests and potentially contaminate food.
2) Clean and sanitize the cooler seals and handles. Dirty handles can cross contaminate food through the food handler.

Comments

Routine inspection of the food facility conducted.

Temperatures:
- Walk-in cooler was at 1C
- Walk-in freezer was at -21C
- Display coolers were holding food at 4C or below
- Under counter cooler was at 3C
- Upright coolers were at or below 4C
- Hot holding units were at or above 60C

All units had accurate thermometers.

Sanitation:
- Ware washing sinks were equipped with functional plugs. The sanitizer sink (and the dispenser) had 200 ppm QUATS.
- Sanitizer spray bottles had 200 ppm QUATS.
- High temperature dishwasher achieved 78C at the final rinse cycle
- Deli slicer was in use at the time of inspection. Ensure the equipment is dismantled and thoroughly washed and sanitized after use or every 2 hours.
- Hand washing sinks were adequately equipped with hot and cold running water, liquid soap, and disposable paper towels.

Storage:
- Stainless steel racks are used for storage.
- Chemicals are stored in a separate area away from food.
- Food is stored at least 6" off the floor to facilitate cleaning.
- Items are covered when stored inside coolers.
- Food grade containers are used.
- Eggs are stored on the bottom shelves and away from ready-to-eat foods to prevent cross-contamination.

Pest Control:
- Facility is monitored by a professional pest control company.
- No signs of pest activity noted at the time of inspection.
- Tin cats were empty.
Note:Ensure the facility is maintained in good sanitary condition to prevent pest infestation. *See violation above*

Administration:
- Stall have valid FOODSAFE level 1 certifications. Copies are posted.
- Permit was posted.
- Logs are maintained for cleaning and sanitation, temperature checks, and COVID-19 staff screening.

COVID-19 Safety measures are in place. Ensure the plan is updated to meet the newest Public Health Orders.
