Observation: Counter in the middle of the kitchen and other items at back of kitchen are cluttering premises and making it harder to clean.
Corrective Action(s): Remove all unneeded items to make cleaning premises easier. Complete as soon as possible. Maintain premises free of unnecessary items.

Remove unneeded items (see above - repeat request).
No painting allowed in kitchen - ok today.
Dipper well is in use. Post poster and use 1 tsp domestic bleach in 1 liter of water (make fresh solution daily) to sanitize scoops, counters, and food contact surfaces after use and every 4 hours if used throughout day. Hand sink has liquid soap and paper towels (at triple sink and hand sink).
Menu today is only scooped ice cream and gelato (made on site). ****Keep ingredient information /allergy information available.
No eggs used. Pasteurized dairy is used. Cooler temperature is <4 C.
Cleaning and sanitizing of equipment: Follow machine manufacturer's directions. Chlorine sanitizer is used. Bleach is available on site.
Operator advises that hamburgers/fries have not been on the menu. The stand up fryers in the back (old staff washroom area) have not been in use. Do not add to menu unless food safety plan submitted and approved by Fraser Health. Obtain all other required approvals (City /Fire re washroom and fryer equipment).
Keep copies of your food safety plan and sanitation plan /cleaning schedule on site - ok.
Keep copies of your updated (less than 5 years old) Food Safe certificates on site (at least one person per shift must have). Provided good until 2023 - ok.
Commercial dishwasher is not in use. Triple sink and separate hand sink are available. Ok given menu (scooped ice cream and gelato ONLY) and all food containers and utensils for customers are single use ONLY.
