Observation: Observed rodent droppings in several areas:
1. Underneath and along the walls where the dry storage shelves are
2. Underneath and along the walls behind cooking equipment
3. Underneath dishwashing area
4. Inside baskets where clean tools are stored
5. Behind and along the wall where the coffee station is
*Reviewed pest control report with operator; bi-weekly visits made, the report lacked information for the inspector fully understand how extensive the infestation is.
Corrective Action(s): Required operator to clean and sanitize all areas noted above. Ensure to wet the droppings prior to sweeping them as they can aerosolize pathogens. Clean and sanitize all utensils through the dishwasher. Ensure to provide pest proof baskets for clean dishes unless other options can be provided. Required operator to follow the technician on his/her next visit and identify specific issues and areas. Further severity of infestation may result in more strict stipulations to control pest activity (integrated pest management)
