Comments

Routine inspection conducted. Facility is maintained in excellent sanitary condition and is well-lit. The following observations were made:

1. Temperatures
- All stand-up coolers at 4C or below, including prep coolers (upper and lower compartment). Upper compartments for prep coolers were not in use at time of inspection
- Undercounter freezers and stand-up freezers at front and back-of-house at -18 or below
- Hot-holder for pizza and wings at greater than 70C. Each hot-held item including pizzas and wings are also tracked with a timer system - product is discarded after time expires
- Hot-dog hot-holder above 60C
- Temperature logs are maintained and up-to-date as of Nov 8, 2018

2. Hygiene and Sanitizing
- All hand wash stations stocked with hot/cold running water, liquid soap, and single-use paper towels
- All employees observed hand washing and properly using gloves at time of inspection, hairnets required for all personnel inside facility
- Both sanitizing pails (front of house and back of house) at >= 200 ppm QUATS
- Sanitizer dispenser releases QUATS at 200 ppm
- Both spray bottles at 200 ppm QUATS
- All utensils, knives, cutting boards maintained in good sanitary condition
- 3-compartment sink present - staff were actively using the sink to wash, rinse, sanitize at time of inspection
- Can opener in sanitary condition
- Ventilation slats were well maintained

3. Storage
- All food products stored at least 6" off the floor
- Ingredients are generally covered with a food-grade lid or unopened in original packaging
- No raw products on-site, all products on shelving are organized and dated, FIFO system employed

4. Pest Control
- Fly traps (x2) present in facility
- No signs of recent pest activity at time of inspection
- Professional pest control company services area every month

5. Administrative
- Manager has FoodSafe 1 / equivalent
- Permit posted and up-to-date

6. The following also require your attention:
- One container of lemons at back prep cooler was found loosely covered with a food container. Ensure that lemons are always covered with a tight-fitted lid or in saran wrap
