Observation (CORRECTED DURING INSPECTION): Prawns were found thawing at room temperature.
Corrective Action(s): Ensure frozen potentially hazardous foods are thawed in the following manner: under cold running water, in a cooler unit at 4C or less, or as part of the cooking process for small portions of food. Prawns were placed under cold running water at the time of inspection. Do not use the handwash station to thaw foods - handwash station is required for handwashing.

Comments

-Follow-up inspection to October 26, 2016.
-Bleach sanitizer was prepared in a spray bottle for the back food preparation area. Solution was tested at 200ppm. Sanitizer spray bottle was labelled at the time of inspection. Ensure spray bottle is relabelled as needed when label falls off or fades.
-Did not observe staff using cloth towels to dry hands at the time of inspection.
-If cloth towels are used for wiping counters in the kitchen (without sanitizer), towels can only be used once and must be stored in a "used towel" location. Reusing cloth towels can potentially recontaminate or cross contaminate surfaces.
-Scoops were stored in a sanitary manner at the time of inspection.
-Sushi prep cooler door seals have been replaced. Ensure seals are maintained in a sanitary condition.
