Comments

Routine:
-Handsinks fully supplied with hot & cold water, liquid soap and paper towel
-Sanitizer noted at 400 ppm QUATS.
***Ensure Sanitizer is at 200 ppm QUATS only. Get test strips to test concentration. Operator has tests but could not find them during inspection. Recommend installing chemical dispenser for all mixed chemicals to keep mixing consistent and quick.
-Sanitizer bucket to sanitize cloths noted at 200 ppm chlorine. Ensure to switch solution every 4 hours or when solution becomes dirty/cloudy.
-Coolers: <=4 C
-Freezer: <= -18 C
-Pizza is hot held and time tracked for 2 hours then discarded
-No signs of pest activity noted. New pest control onsite - Pest Solutions
-Staff is FOODSAFE certified
-General sanitation satisfactory - Operator has cleaned out oven (both levels), oven hood and other areas of the kitchen - major improvements noted

-Plastic reusable dishware in use for dine in option - no dishwasher onsite
