Observation: Food debris was found under equipment in the kitchen. Grease was also found accumulating on the vent hood above the fryer.
Corrective Action(s): Ensure the facility is maintained in a clean and sanitary condition at all times to prevent potential pest attraction and a potential fire hazard.

Observation: Food prep sink in the kitchen is leaking water.

Comments

-Bar area is currently not in use.
-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Prep line coolers were at 4C (top and bottom).
-Pizza island cooler was on a defrost cycle. Foods items were at 5C to 6C.
-Hot holding was greater than 60C.
-Chicken was cooked to greater than 74C.
-Temperatures are checked and recorded daily.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle tested at 200ppm.
-Equipment was found to be clean and sanitary.
-Ice machine was clean and well maintained.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-Facility is serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-Washrooms clean and equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-General Manager had valid FOODSAFE Level 1 equivalent training.
