Observation (CORRECTED DURING INSPECTION): Observation: Observed prepared pizza dough left on top of the pizza oven underneath dirt & grime build-up.

Observation: Observation: Observed old mouse droppings along the perimeter of facility walls underneath equipment.

Comments

- Hand washing stations are equipped with hot/cold water, paper towel, liquid soap

Temperatures:
- Walk-in fridge was below 4C; internal probed temperature of pizza sauce was 1.3C
- Walk-in freezer was at -13.4C during inspection
~ Food products solid to touch
- Prep. fridge was below 4C; internal probed temperature of sliced ham was 2.2C & internal probed temperature of diced tomatoes was 1.8C
- Drink fridge was below 4C; no perishable products
- Hot holding of pizza slices was above 60C; internal probed temperature of "ham & pine" slice was 61.2C
- Thermometers were present in all fridges and freezers

General maintenance & Sanitation:
- Food products are stored 6-inches above the ground
- No signs of pests during inspection
* As per operator gas stove & frier are not in-use anymore; hence, ventilation hood has not been serviced (service is due)
- Storage of food products is organized
- 2-compartment sink available with plugs, however, was not in use during inspection
* Bleach sanitizer was mixed during inspection; it was measured to be at a 200ppm concentration

* As per operator, facility currently under going construction & is to be renovated within next few weeks/months

Administrative:
- FoodSafe Level 1, or equivalent was available during inspection
- Temperature logs were maintained & up-to-date
- Pest control in place via Bugman
* Permit will be requested by operator (missing as of inspection).
