Observation (CORRECTED DURING INSPECTION): Line cooler at 0.2C rear compartment (cheese) to 12C front ambient temperature due to leaks in the doors and lack of air circulation in unit. This unit is not operating properly. All foods must be held at 4C or below.
Corrective Action(s): Move all foods prepped within 2 hours into main walk in cooler at 4C or below. Only store food in this unit which can be used up within 2 hours in mean time. Potentially hazardous foods stored above 4C for more than 2 hours is discarded. Repair this unit.

Holding units: Sand up freezer at -17.8C meat balls, pop cooler 3.4C,
hot holding pizza display at 61C after correction, walk in cooler at 3.2C.
