General Observations: Coolers are below 4 degC Walk-in Freezer is at -19 degC Hotholding is above 60 degC. ENSURE FOODS ARE REHEATED TO 165 DEG IN THE MICROWAVE BEFORE BEING PLACED IN THE WARMER. Handsink's fully equipped; 3-comp. sink is fully equipped. Manual dishwashing procedures are being followed. Temperature logs are being maintained as required. Knives are being stored in ice water now instead of in a sanitizer solution. ENSURE THAT THE WATER/ICE IS REFRESHED ONCE THE ICE MELTS. Kwality Pest Control is on contract.
