304 - Premises not free of pests [s. 26(a)] Observation: Minor fruit fly infestation noted by dry storage shelves in kitchen area. Discussed with operator. No visible breeding habitat. Possible moisture deeper along floor wall interface from walk-in cooler condensation. A few flies noted in front, but insignificant. Corrective Action(s): Spray seem at floor wall connection with detergent or degreaser daily for a week or two to try and break the breeding cycle. Keep front smoothie area as clean as possible to prevent flies from developing in this area and monitor. Violation Score: 3

Most areas of the premises noted as a concern in previous inspection much improved this time. Keep it up. **Be careful with the movement of brown sugar bin below front sink - This bin (which is heavy) can easily bang into and dislodge the drain pipe. Monitor this action and fix as needed. Minor water accumulation on shelf, but not stagnated. Monitor and clean as necessary. Cooling units less than 4 C; Hot holding units above 60 C; Freezers below -18 C. Generally good isolation of raw proteins from ready-to-eat foods. Dishwasher at 50 ppm - sani-buckets above 200 ppm **try to have a system for dosing to achieve proper ratio of water to bleach so 100 ppm maintained.
