A follow up inspection was performed for routine inspection MKIM-CSXU24 - Tofu/mushroom sauce stored in hot holding unit at 62C - High temperature dishwasher had a final rinse of 71C on dish surface - Hand washing sink has access to hot water - Utensils kept in a clean and sanitary manner - General sanitation satisfactory ENSURE TO START A TEMPERATURE LOG FOR HOT HOLDING AND COLD HOLDING UNITS ENSURE TO START A SANITATION LOG FOR HIGH TEMPERATURE DISHWASHER (MUST BE ABOVE 71C)
