All fridges are maintaining foods at 4 degrees Celsius or colder. All freezers are -18 degrees Celsius or colder. Wiping cloths were being stored in quat sanitizer with a residual of 150- 200 PPM. Note timer to change buckets hourly is broken. Recommend time tracking on paper until the broken timer can be replaced. Dishwasher final rinse reached 73 degrees Celsius at the plate surface. Liquid soap and paper towel at handsinks. Do not block back handsink.
