Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Coolers in front service area maintained at 4C or less
- Walk in cooler (downstairs) at -4C
- Walk in freezer (downstairs) at -16C
- Coolers in food prep area recorded at 4C or less
- Stand up freezers noted at -18C or less
One of the stand up freezer was defrosting at the time of inspection and recorded at -7C
- Hot holding units (egg, chicken) noted above 60C
- Temperature logs were maintained and found up-to-date.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers with proper labels.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- General sanitation of the facility was satisfactory.
- Hand wash sinks were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available and the concentration of QUATS noted at 200ppm. Staff stated that the sanitizer solution is changed every hour.
- Sanitizer dispenser releases 200 ppm QUATS at 2 compartment sink.
- High temp mechanical dishwasher used for warewashing and recorded at 75C (dish surface) during rinse cycle.
- Washrooms maintained in good sanitary condition.
- Sanitizer logs were maintained for dishwasher and found up-to-date.
- Ventilation hood is scheduled for service this month.

Pest Management:
- Professional pest control company conducts routine checks. Recent inspection report verified.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.
