Observation (CORRECTED DURING INSPECTION): Black mould observed inside the ice machine inner components. Directed staff to clean the machine. The ice machine must be cleaned and sanitized entirely at least every 2-3 months. To clean and sanitize: 1. Turn off the machine 2. Discard all ice 3. Wash with warm soapy water 3. Rinse 4. Sanitize 5. Air dry

Observation (CORRECTED DURING INSPECTION): No sanitizer present. Mixed up 100 ppm bleach solution for wiping cloths during the inspection.

Observation: Uncovered food throughout the enitre premise. All foods MUST be covered to protect them from contamination. This includes inside the walk-in cooler. Repeat violation.

Observation:
Observation #1: Grease and old carboard observed underneath deep fryer. This must be cleaned up thoroughly. Cardboard is not to be used unless it will be changed DAILY. Greasy cardboard is a pest-attractant and a fire hazard.
Observation #2: Dust observed on walk-in cooler fan and ceiling. Dust may contaminate foods stored in walk-in cooler.

*As per last inspection, sanitizer must be used at ALL stations. Sanitizer buckets must be made new at least every 2 hours. Soak all wiping cloths in sanitizer buckets when the cloths are not being used. The sanitizer will act on the germs present on the cloths and on surfaces
All coolers operating at </= 4C (*other than left line prep cooler).
All freezers operating at </= -18C
All hot-holding stations at >60C
No signs of pests observed
Low-temperature dishwasher had 50 ppm chlorine sanitizer present at the plate level upon final rinse cycle
