Observation (CORRECTED DURING INSPECTION): Fried rice Kimchi cooling in closed plastic bag at room temp. Food is from cool steam table at 40 C.
Corrective Action(s): Ensure all hot food requiring cooling is rapidly cooled. Cool food in ice bath and or in open, shallow small containers to allow hot air to escape.
All food under 60 C for more then 6 hours must be discarded.

Observation: 1. Hot PHFs in steam table noted at 40-45 C - water level of steam table appears low.
2. Rice Bap Burger noted in OFF rice cooker - noted at 55 C
Corrective Action(s): 1. Ensure all PHFs are maintained at or above 60 C. All food below 60 C for more then 2 hours must be discarded.

2. Ensure all powered hot holding units are ON when hot holding food to maintain 60 C or higher. Never turn OFF hot holding units when food is being stored in unit for public consumption. Turn unit back on and monitor temperature.
