306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Accumulated dust on the walls and ceilings around air diffusers in the kitchen area; and food debris on the undersides of tables & sinks, and on the walls behind/beneath tables, sinks and shelves. The dust could fall into food, and food debris will attract/breed pests (rodents and flies).
Corrective Action(s):
Clean the mentioned areas with hot water and soap to remove the dust and food debris. Ensure this is done on a routine basis.

Observation:
Observed a number of plastic food inserts/containers were chipped, cracked or damaged. Pieces of plastics could fall into food, and/or bacteria can grow in the cracks.
Corrective Action(s):
Inspect all plastic food inserts/containers and discard all damaged ones. Purchase new ones, and ensure to routinely inspect such items for damage.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -10C or colder; hot holding units 60C or hotter; and thermometers present.
- High temperature dishwasher, had a rinse cycle temperature of 71.7C at the plate's surface, as per max/min thermometer.
- Low temperature glasswasher had [Cl2] of 50ppm.
- Quats sanitizer in spray bottles had 200ppm strength. Ensure the sanitizer solution is replaced with fresh solution every morning. Fill spray bottles less, so it is used within one day.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; in groups with proteins separate or below RTE foods; and 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement only needed in the mentioned areas. The exhaust canopy was professionally cleaned in Jan. 2019 and is due in June 2018, as per service sticker.
- Little, to no signs of pests (a couple of drain flies found in bar area). A professional pest company is contracted to monitor the facility every month.
- FoodSafe certified staff present.
- The plastic lid on the flour bin has been replaced.
