Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher final rinse temperature only reaching 66c (At plate level). Must be a minimum of 71c at plate level.
Correction: Dishwasher may be used to wash glassware. Once washed glassware is to soak for a minimum of 30 seconds in bleach at a concentration of 100ppm. Sink set up with bleach solution at time of inspection. Provided test strips to verify concentration.
Resanitize all glassware as discussed as it is unknown as to when the dishwasher stopped working properly..
