Observation (CORRECTED DURING INSPECTION): One cut open cantaloupe stored in the walk-in cooler was observed to have white mould on there.
Corrective Action(s): Directed owner to discard the fruit. Cantaloupes tend to spoil more easily, recommend dating the container to use up cut cantaloupes within 3 days.

Observation (CORRECTED DURING INSPECTION): Bococcini and cream were found in the produce cooler and measured at 10C.
Corrective Action(s): Directed owner to move the bococcini, cream and caesar dressing to the walk-in cooler. Adjust the cooler and replace with a working thermometer so that the temperature can be maintained under 4C.

Observation (CORRECTED DURING INSPECTION): 1) Meat slicer appears to have some food debris under the guard. They use this unit to cut salami usually. 2) Black mildew noted in the ice machine.
Corrective Action(s): Owner started cleaning the slicer and ice machine at time of inspection. Reminder to unplug the slicer and clean under better lighting for safety reasons.

Observation: Many frozen meat were stored in the liquor store plastic grocery bag in the chest freezer.
