- Hand washing sink properly supplied with hot/cold running water, liquid soap, and paper towels.
- Dishwasher measured 100ppm chlorine (residual) at the dish surface, detected after final rinse cycle. Good.
- Bleach sanitizing solution available in spray bottle at 100 ppm - 200 ppm (chlorine residual).
- Coolers measured at 4C or less.
- Freezer temperatures satisfactory.
- Hot-held soups measured 60C or hotter.
- Food stored off the floor and protected from contamination. Pest-proof bins with lids in use.
- Equipment and utensils maintained in sanitary conditions.
- General sanitation satisfactory.
