Observation: Operator is selling some menu items at retail:
-Vacuum packing meatballs, beef tendon
-Jarring House XO Sauce
-Packaging desserts: Coconut Pudding, Jelly with Lychee, Mango Pudding
Corrective Action(s): Labels are insufficient: At minimum there should be Restaurant Name, Phone Number, Address, Ingredients
-submit labels once completed
Resubmit the Food Safety Plans updated to reflect the added retail items

Observation: Floor area under the fryers are filthy -food debris/grease laiden
Bar area is cluttered and disorganized:
-personal coffee cup there
-knife used for cutting lemons in a plastic bag
-used disposable gloves on counter
Corrective Action(s): Clean, degrease and disinfect under the WHOLE cooking line nightly
Organize, clean and sanitize the bar counters
No eating/drinking in food preparation areas
Do not leave utenisils in unsanitary areas -after use put in dishwasher, leave clean utensils in washable buckets
Throw out disposable gloves after use
