Business is now permitted to serve soups. Corporate FSP has been approved. Revised floor plan indicating placement of the soup warmer has been submitted. Specs on warmer has been submitted. Unit can be used for reheating.

Discussed soup prep and holding procedures. Soups are received frozen; thawed in the cooler; reheated in the unit to 170 degF (probe thermometer used for testing temperature) and then stored at this temperature. Any leftover soup is discarded at the end of the day.
At the time of inspection, soup temperature in the warmer was 70 degC. As discussed, you can keep the soups at or above 140 degF (60 degC) once it has reached a reheating temperature of 165 degF (74 degC).
