Yogurt stored in stainless steel container then submerged in ice bath. Internal food product temperature at or below 4 degrees C.
Under the counter cooler at 3 degrees C.
Freezer at -17 degrees C.
Dipper well in use.
Preparation cooler inserts and lower section at or below 4 degrees C.
Sliding glass door cooler and upright glass door cooler both at or below 4 degrees C.
Walk in freezer at -18 degrees C.
200ppm quats available for use in container.
