Routine Inspection
- Hand wash station stocked with liquid soap and paper towels. Re-caulk the wall and sink joint near the prep cooler.
- All cooler ambient air temperature below 4 degree Celsius
- walk in freezer ambient air temperature below -18 degree Celsius
- Hot holding temperature above 60 degree Celsius
- Dishwasher final rinse has 50 ppm Cl. Clean around the dish wasing area and replace the caulking.
- 200 ppm quats sanitizer available for wiping cloths.
