-Refrigerated storage/display temps were adequate (4 deg. C or below):

-Under counter cooler 4 deg. C
-"Sweet treats" cold display 2 deg. C
-Bakery walk-in cooler 3 deg. C
-Bakery walk-in freezer -18 deg. C
-Food stored in a manner to prevent contamination
-Quats sanitizer (200 ppm) present in warewashing sink and in "kleen pail" for use with wiping cloths
-High temp. dishwasher functional & met sanitizing temp. required. Temp was 72 deg. C at dish surface (min is 71 deg. C).
