304 - Premises not free of pests [s. 26(a)]
Observation: * Flies were seen in kitchen and storage areas and business not even operating yet (ie. no donuts on site, etc). Fly controls were in place in some areas-- however, more fly controls to be implemented in areas to reduce fly problems. Also, once reopened food product may require covering to reduce risk of fly harbourage on food (eg. using clean plastic to cover foods, etc)
Corrective Action(s): * Ensure adequate fly controls in place and that food product covered properly too so as to reduce risk of fly harbourage

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Still found lots of construction dust through out front and back areas of premises that requires cleaning/sanitizing until fully cleaned
Corrective Action(s): * Ensure all floors/baseboards, food equipment, shelving, storage areas, walls, etc., cleaned/sanitized properly prior to reopening. Construction dust still evident through out from renovations. Operator and staff were working on these areas and operator said they would complete all cleaning/sanitizing prior to reopening

Observation: * Shelving in walk-in cooler has rusted and operator has ordered new shelving. Also, shelving to be on wheels for easy cleaning and maintenance when moving shelving
Corrective Action(s): * Ensure all rusted shelving replaced and shelving installed on wheels to allow easy moving for cleaning purposes
