Observation (CORRECTED DURING INSPECTION): Indoor bar glasswasher was not dispensing sanitizer. 0 ppm chlorine residual detected
Corrective Action(s): After priming the sanitizer line and adjusting the line, 100 ppm chlorine residual was detected at the glass surface. Ensure to check sanitizer concentration with test strips on a daily basis.

Observation: Two gaps/holes noted under door sweep/weather stripping of back kitchen door (by walk-in cooler and freezer).
Corrective Action(s): Replace weather stripping such that any possible pest entry points are sealed.

Observation: PVC "bumper" for microwave shelf needs to be replaced/cleand and sanitized.
Corrective Action(s): All surfaces must be smooth and easily cleanable. The tape holding the "bumper" together provides crevices where food debris can be trapped.

- All hand washing stations were properly supplied.
- Dishwasher reached 77C at the dish surface during the rinse cycle - good.
- Patio bar glasswasher dispensed 100 ppm chlorine to the rinse cycle - good.
- Quats surface sanitizer available at 200 ppm in spray bottles
- All coolers were measured at 4C or colder.
- All freezers were measured at -18C or colder.
- All hot-held food items were measured at 60C or hotter
- Proper thawing was observed (under cold, running water in food prep sink).
- Food storage practices were satisfactory
- General sanitation was satisfactory
- Temperature records well maintained. *Recommend keeping logs for cooked temperatures, cooling temperatures, and hot-holding temperatures as well.
