Observation (CORRECTED DURING INSPECTION):
No paper towels at hand washing station beside the dough mixer.
Corrective Action(s):
Refill paper towel dispenser. Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water at all times.

Routine Inspection:

Kitchen:
Hand washing station by cookline and near dishwashing area fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers (walk-in, upright, prep) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Walk-in freezer maintained below -18 degrees Celsius.
- Hot holding units were turned on towards the end of the inspection, before the lunch service. Ensure the hot holding units are pre-heated to at least 60 degrees Celsius (140 degrees Fahrenheit) before foods that have been cooked/re-heated to at least 74 degrees Celsius (165 degrees Fahrenheit) are placed into the units.
All cold holding units equipped with thermometers.
Cooling wand available in walk-in freezer.
Concentration of sanitizer (at dispenser and in spray bottle) measured to be within acceptable limits (272 ppm to 700 ppm DDBSA and 704 ppm to 1875 ppm Lactic Acid).
3-compartment sink available for manual warewashing. Drain plugs available.
High temperature dishwasher sanitizing with 71.5 degrees Celsius at the dish level after the final rinse cycle.
All prep sinks equipped with hot/cold running water and drain plugs.
Dry storage room clean and organized.
All equipment stored in a sanitary condition.

Food Donation Room:
Temperature of upright cooler maintained below 4 degrees Celsius (40 degrees Fahrenheit).
Temperature of upright freezer maintained below -18 degrees Celsius (0 degrees Fahrenheit).
Cooler and freezer both equipped with built in thermometers.
All dry foods, fruits and vegetables on storage racks stored at least 15 cm off the floor.

Overall:
General cleanliness very good at the time of inspection.
No signs of pest activity at the time of inspection.
Pest control in place.
Premises well lit.

The person in charge at the time of inspection discussed a few maintenance issues that are being addressed:
- Frame that closes electrical wires in walk-in cooler door has come off. A new frame will be installed.
- Faucet for scrap collector in dishwashing area has come off. A new faucet has been ordered.
