Observation (CORRECTED DURING INSPECTION): 1. Deli meat slicers are sanitized at end of day only.

2. Wiping cloths stored in soap and water mixture.

3. Chlorine bleach sanitizing solution is too strong (>200 ppm) in some spray bottles.
Corrective Action(s): 1. Equipment (e.g. meat slicers) and food contact surfaces (e.g. cutting boards) in continuous use must be cleaned and sanitized at least once every 4 hours.

2. Store wiping cloths in 100-200 ppm chlorine bleach sanitizing solution between uses.

3. 100-200 ppm chlorine bleach sanitizing solution: 1 tsp chlorine bleach + 1 L water
**Use chlorine test papers to verify concentration.

Observation: - Flooring requires repair and/ or replacement in the following areas:
- High moisture area is meat processing room (under cleaning/ washing sinks).
- Under and around meat saw in front retail deli area.
Corrective Action(s): - Repair and/ or replace missing floortiles and baseboard. *Floor and walls surfaces should be smooth, non-absorbent, and easily cleanable.*

Note: Operator mentioned possibility of removing floor tiles and sealing concrete instead. No objections to sealed concrete.

- Hot and cold water, liquid soap and papertowels are available to facilitate handwashing practices in meat processing room and front retail service area.
- Walk-In Freezer: -10C to -12C (Food product appears maintained in a frozen state. Operator advised that unit just finished defrost cycle at time of inspection).
- Walk-In Cooler: 1C
- Retail Display Cooler Cases: <4C
- 200 ppm chlorine bleach sanitizing solution available. Chlorine test papers available to verify sanitizer concentration.
- Cleaning and sanitizing procedures reviewed with operator.
- Employees wear hairnets in meat processing room. No jewelry policy in place.
- General sanitation of premises appears satisfactory.
- No signs of pest activity noted.
