Premise is sanitary. No signs of pests. Hand sinks available with liquid soap, paper towels and running water. Hot and cold water available. Food protected from contamination. Sushi fridge at 3.8C sealed tuna sashimi, stand up cooler at 3.2C green beans, bar fridges at 4C or below milk. Temperature monitoring and chemical test strips in use. 300 ppm quat sanitizer in use in spray bottles. Utensils and single use items are sanitary. Glass bar washer final rinse at and above 12.5 ppm Iodine at the plate. Main plates are washed in buffet dishwasher. Sanitization step adequate at dishwasher at least 71C at the plate.
