*Update your written food safety plan with respect to documenting your cooling steps with respect to pasta and meat sauce.
Pasta is being properly rapidly cooled after cooked under running cold water then transferred to the walk in cooler..
As discussed use smaller metal containers and a water bath to rapidly cool the meat sauce as discussed.
