Observation: Internal temperature of tuna and salmon in the sushi display cooler (sushi bar) ranged from 7-8 degrees C (lunch rush??). Some seafood items were discarded during the inspection. Salmon and tuna were transferred to the bottom cooler at 4 C or below.
Corrective Action(s): Repair or service the sushi display cooler so that it is capable of maintain fish and seafood items between 0-4 degrees C.
A probe thermometer is required onsite to monitor internal temperature of food items in the sushi bar.

Observation: Sugary spill noticed behind the deep freezer and on the pallet used for storing food buckets. Food and debris build up noticed
in hard-to-reach areas and underneath and behind equiopment.
Corrective Action(s): Thorough cleaning required throught the ktichen especially underneath work tables and equipment and shelving above the double wash sink.Walk-in cooler shelves require thorough cleaning. (August 4, 2016)

Observation: Ice build up noticed in the line cooler across from the grill.
Sliding door cooler registered 6-7 C at the time of inspection.
Corrective Action(s): Defrost the cooler and service as necessary to ensure it is capable of maintaining food items at 4 C or below at all times.
Repair or adjust the sliding door (pop) cooler so that it is 4 C or below.

Hot holding of miso soup, rice and teriyaki sauce above 60 degrees C.
Dishwasher reached 76 degrees C at the plate surface during final rinse.
