Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Heavy accumulation of grease noticed on the fume hood filters especially on the right hand side. Required professional cleaning
and servicing has not been done since October 2016.)
Comments

The fume hood has been professionally serviced and cleaned. Good.
*Ensure to clean/degrease the fume hood filters at lest twice a month.

* Boxes of raw chicken were found stored on the floor. Adequate cooler space must be provided
for safe storage of raw poultry onsite as the poultry boxes or buckets can not be stored next to
fresh vegetables and produce items or sauces etc. Ensure to provide a separate/desginated commercial cooler
for storage of raw poultry items (both raw and marinated).

According to the employee on shift, a new double compartment sink (food prep sink) will be installed.
* Ensure all chemicals. cleaners and sanitizers are accurately labelled.
Bleach sanitizer in the third sink tested 200 ppm.
