Observation (CORRECTED DURING INSPECTION): Yellow organic buildup noted on the plastic drop plate in the ice machine.
Corrective Action(s): **Issue corrected at the time of inspection** Ice machine was being cleaned and sanitized as soon as the issue was pointed out to Management.
Please follow your Sanitation Plan for cleaning and sanitizing the ice machine. If buildup appears sooner then the next scheduled cleaning, consider increasing the cleaning frequency.

Observation: 1. Dust noted on the ceiling in the main cooking area.
2. Black buildup noted on the head of the dish sink sprayer.
3. Mouse droppings noted in the bar area, below the soda gun dispenser.
Corrective Action(s): 1 and 2. Clean and sanitize the aforementioned areas and maintain in a sanitary condition.
3. Sweep, clean and sanitize the mouse droppings noted and monitor the area to see if more droppings appear after the cleanup. If so, continue working with your pest control company to manage issue.

Observation: 1. Exposed bare wood noted below the back of house handwash station cabinetry unit - by the back office.
2. Hole/ exposed wood noted on the wall below the dirty side of the dishwashing area.
Corrective Action(s): Repair the aforementioned areas to ensure all surfaces in the facility are made of materials that are imprevious to moisture, non-porus and easily cleanable. Fill the hole noted on the wall to prevent potential pest entry and/ or harbourage.

Routine inspection conducted today:
Handwash stations, including staff restrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4C or below.
Excellent use of ice bath underneath the inserts in the cold well of the refrigeration unit in the kitchen area. This helps keep cold potentially hazardous food cold when the cold well is constantly opened and exposed to the high temperature of the kitchen.
All freezer units were noted at -18C or below.
All food that are not in active use are stored in the proper storage hierarchy, protected and off the floor.
Overall general cleanliness and organization satisfactory.
Low temperature dish machine noted with 100 ppm chlorine residual.
QUAT sanitizer spray bottles available in the front of house and back of house. 200 ppm QUAT detected in all spray bottles.
Mananger's FOODSAFE level 1 equivalent certificate was available during the inspection.
