205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Two pesto pasta were measured at 12 and 13.9C; two fruit salads were measured at 10-10.2C; one salad measured at 15C and parfait measured at 11.8C; all were stored in the sandwich cooler. Remaining sandwiches measured 7.8 to 8C. No temperature record for today, see photo. REPEAT.
Corrective Action(s): Cold potentially hazardous food must be stored at 4C or colder. Discarded all food >10C and transferred sandwiches to undercounter cooler at 4C. Temperature records must be up to date and corrective actions indicated. Keep all cold potentially hazardous food in the undercounter cooler until Health Department verifies that the sandwich cooler is fixed. Refer to Correction Order.

Observation: Marks noted on the inside of ice machine.
Corrective Action(s): Please clean and sanitize the inside of ice machine by follow up inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Wet wiping cloth used to wipe milk wand on espresso machine is left on the machine between uses. Multiple containers of sanitizer were measured at 0-50ppm Quats. One spray bottle meaured 100ppm Quats and the other spray bottle measured 200ppm Quats. One container with clothes submerged measured 100ppm chlorine sanitizer. No test strips onsite. Staffs are unsure the mixing ratio. REPEAT.
Corrective Action(s): Train all staffs so they understand when chlorine vs. quats are used. Designate a separate wiping cloth station for milk wand. Change sanitizing solution more than just twice a day, recommend using timer or lable. Obtain test strips within expiry date and obtain a measuring cup/spoon to mix the sanitizer. 100ppm chlorine bleach or 200ppm Quats should be applied on food contact surfaces. Staffs remixed all containers and spray bottles with 200ppm quats at time of inspection. Refer to Correction Order.

Observation: 1) Sandwich cooler is reading at 7.6C, no indication that there the unit is on defrost cycle. 2) Ceiling light above dishpit is out.
Corrective Action(s): 1) Please repair/replace the sandwich cooler and retain service report for review. The sandwich cooler should be at <4C. 2) Please replace noted ceiling light. Refer to Correction Order.

Observation (CORRECTED DURING INSPECTION): One staff lunch bag placed in undercounter cooler at the bar.
Corrective Action(s): Please remind staff to place lunch bags in the back cooler where it is designated to store as the bar area is designated to store items used for the business.

No apparent signs of pest noted at time of inspection
Permit posted and shift leader is Foodsafe certified

*Note: undercounter cooler/shelf across from espresso machine has been removed and shall be replaced with new shelving unit only. Current refrigeration capacity appears to be adequate. In the future, please DO NOT make structural changes including equipment removal/addition without Health Approval.
