Observation (CORRECTED DURING INSPECTION): * Tempura prawns and rice were found to be at room temperature made the night before. This is unacceptable cooling/handling practise for potentially hazardous foods. These food items were discarded. Once perishable foods are cooked then they are to be cooled quickly and stored in cooler at 4'C/40'F or colder

Corrective Action(s): * Ensure all perishable foods cooked and then cooled quickly and then stored in cooler at 4'C/40'F or colder. Discussed handling/cooling processes with operator and staff.

Observation (CORRECTED DURING INSPECTION): * Some staff drinks/food found in food prep areas and this is unsanitary and can lead to cross contamination issues. Also, food was found uncovered in sushi bar area and this is can lead to cross contamination issues too.
Corrective Action(s): * Ensure staff drinks/food kept away from food/food prep areas to reduce risk of cross contamination. Ensure all food covered in storage areas
