Observation: New operator opened store for business without Health Approval. Indicated to operator before that Health Approval is required prior to opening as renovation was done.

Observation: Saw dust noted on the floor (corner) by stainless steel table, under cashier. Dust noted on the shelf of prep table.
Corrective Action(s): Please clean and sanitize ALL surfaces prior to reopening.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Baseboard incomplete in the back, raw wood noted under stainless steel prep table and cashier area, incomplete floor to the back. Tile used in display cooler is too thick as it increases ambient temperature.
Corrective Action(s): Please finish all work and ensure all surfaces are smooth, non absorbent and easily cleanable. Switch to a thinner, washable lining for display cooler or use a different type of shelf instead where cold air is able to reach all areas of cooler.

Observation: 1) No dispenser for soap or paper towel in the washroom. 2) Display cooler measured at 7C.

Comments

New operator took over same legal ownership.
Cosmetic changes made to the store including floor, painting and replacement of fridge, addition of pop fridge.
Operator informed that he plans to use new sandwich cooler for self serve (possibly salad) in the future, as well as prepackage pastries (Costco) stored on top of new pop cooler.
Please seek Health Approval prior to using new sandwich cooler as sneeze guard and Food Safety Plan is required.

Handwashing station at front area has soap, paper towel, hot & cold running water available
Three compartment sinks is operational with two drain plugs
->please reinstall backsplash and place FHA warewashing sign here instead
Meat slicer appears to be maintained
New soup well: 60-65C (reheated via microwave, Campbell's soup)
->obtain probe thermometer for soups
Freezer: -12C
Reach in cooler: 4C
Cheese cooler: 3C
Olives/pop cooler: 4C
Bleach sanitizer @100ppm
->obtain chlorine test strips as the one onsite is for pool use
No apparent signs of pest noted at time of inspection

Note: Walk-in cooler requires upgrades and is not turned on. Please ensure it is cleaned, maintained at 4C or colder with a thermometer before use.
