Observation: Dishwasher's rinse cycle required a manual hold to start the cycle
Corrective Action(s): Operator stated they have obtained a new dishwasher; however, they are waiting for a part. In the interim, staff are holding switch for atleast 30 seconds. Dishwasher was checked with a probe thermometer and is able to reach 71C at plates surface during the rinse cycle. This is only a temporary measure. Keep inspector updated on progress for installation of new dishwasher. To be completed with 30 days.

Ensure sanitizer in spray bottle is replaced every other day to ensure it is maintained at 200ppm Quats. Recommend filling bottles only half way to promote turnover.

Temperature logs are maintained - start recording dishwasher's rinse cycle as well. Obtain a MAX/MIN thermometer. Ensure the temperature reads a minimum of 71C during the rinse cycle.
