Corrective Action(s): Remove food and store in walk in cooler (less than 4c). Operator states food was left in cooler for less than 2 hours. Have line cooler serviced. Do not use the line cooler unless it maintains food less than 4C

Observation (CORRECTED DURING INSPECTION): Fried rice in hot holding unit 34C. Rice stored in a metal bowl inside the hot holding pan.
Corrective Action(s): Operator states rice was just made. Transfer it into the hot holding unit (no bowl) and monitor temperature with a probe thermometer. Temperature of rice must be maintained over 60c.

Observation: Rodent feces observed near cardboard box in dry storage area
Corrective Action(s): Operator believes it is old feces and that there are no rodents in the facility. Have dry storage checked frequently by a pest control company to ensure no rodent activity. No evidence of food affected in dry storage.
