A routine inspection was conducted, the following observations were made:
- Coolers 3C or colder; freezers -18C or colder; thermometers present; and temperatures recorded daily.
- Low temperature dishwasher had [Cl2] of 100ppm during rinse cycle.
- Quats sanitizer in cloth buckets was 200ppm. Solution changed ever 1/2 hour, timer is set to remind staff.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored 6" off the floor on shelves.
- No expired food for sale or in use. FIFO rules followed.
- General sanitation level is good. A few drain/fruit flies observed, ensure all pooling water is eliminated; surfaces are absent of food debris; and surfaces are kept dry. Floor mats in front service area are removed daily to mop floors and pressure washed quarterly. Prior to placing mats onto floor, ensure the floor is dry and the bottom of the mats are dry. This will prevent pest harborage and eliminate wet/mildew odors.
